Apple-Stuffed Gingerbread Pastry

Same recipe for the cake as the cupped-cakes (get it?) sans the almond extract.
The icing is made from
- 30mL vanilla soymilk
- 3/4 cup powdered sugar
- 3 teaspoons almond extract
Easy! You can make this cake (from start to finish) in about an hour.
