Hummus sandwich on locally fired sour dough, piled with spinach, carrots, tomato, broccoli, and cucumber.
Fresh panini with sundried tomato nut cheese, baby spinach, tomato, cucumber, and lots of fresh basil.
I call it “the sun-derie”. I just think it sounded neat.
Going over to a friend’s house for dinner tonight, decided to make falafel and a cucumber-mint sauce for dipping.

- 1/2 large cucumber
- 30mL mint
- 15mL salt
